Coconut and chocolate chunk flapjacks
I really fancied flapjacks yesterday. I’m not a huge breakfast person, but I do like a little something to nibble on with a cup of tea mid morning, and biscuits get a bit boring. You can easily make these vegan by substituting the butter, checking that the golden syrup you use is vegan (Lyle’s definitely is), and using vegan chocolate (did you know that Galaxy do vegan chocolate bars, including flavours like Caramel and Sea Salt and Smooth Orange? I’ve only ever seen it on Amazon though). Add coconut chips or dessiccated coconut, plus peanut butter, chopped nuts or dried fruit if you want. I love that as long as you keep the basic fat/sugar/oats ratio, you can personalise them as much as you want. If you want to go mad, substitute your favourite chocolate treat for the squares… Rolos or even slices of Mars Bar would be amazing!
Coconut and chocolate chunk flapjacks
Makes 16 squares
You will need:
175g butter (or coconut oil/plant based spread/whatever)
115g light brown sugar
4 tbsp golden syrup, honey, or maple syrup
400g porridge oats
20g dried coconut slices or desiccated coconut
16 squares chunky milk chocolate
Firstly, preheat your oven to 180 C/gas 4, and fold or scrunch a bit of parchment or baking paper, and line a brownie tin.
Next, on a low heat, melt the butter, sugar, and golden syrup together in a large saucepan. When it’s all melted, add the oats and the coconut. Give it a really good stir so that the oats are all properly combined.
Press the mixture into the lined brownie tin and smooth it over with the back of a spoon. Now press in your squares of chocolate (sorry to those people who are currently twitching that I didn’t get them all the same way up). Bake for 20 minutes, turning half way through if your oven is a bit unpredictable, like mine. Allow to cool before lifting out of the tin and slicing.
