Maple leaf pumpkin spice biscuits
Happy Saturday! Phew, we made it. Time to kick back, chill out, enjoy your home and family and carve a pumpkin or two. I’m up early this morning and it’s lovely outside: misty and cool, with dew covered cobwebs and scattered leaves and birds eating berries. I love this time of year, and how better to celebrate everything autumnal than with warmly spiced leafy biscuits? These maple leaf pumpkin spice biscuits came about after I found this fab maple leaf cutter in HomeSense when I was shopping for Halloween things. It’s even got a little extra bit so you can press the leaf pattern into the cookie!
Maple leaf pumpkin spice biscuits
You will need:
100g salted butter, room temperature
100g caster sugar
2 tbsp maple syrup
200g plain flour
1 tsp pumpkin pie spice (or mixed spice)
1 tsp bicarbonate of soda
Assemble your ingredients: cutter from HomeSense, pumpkin pie spice from Steenbergs and copper spoons from Pottery Barn
Preheat the oven to gas 3/160 degrees C, and line a couple of baking sheets with baking paper or Bake-o-glide and assemble your ingredients. If you don’t have a lovely cousin in Canada that brings you amazing maple syrup (thanks Deb!), then you can use honey or golden syrup too.
I use a food processor for this, but it is quite easy (if a bit harder work) to do it by hand: first, beat the butter and sugar until it’s light and fluffy, then beat in the maple syrup.
In a separate bowl, sift the flour, spice and bicarbonate of soda together and then carefully mix it into the butter and sugar until it forms a dough. It takes a while to come together, but be patient, you’ll get there.
Roll it out until it’s about 1/2 cm thick, then cut out your leaf shapes (or just use a round or square cutter) and place on a baking tray. If you’re using the maple leaf cutter set, press it into the leaves to create the leaf pattern.
Bake for about 15 minutes. They won’t really change shape but will become a light golden brown. Sprinkle with a little brown sugar and allow to cool.
If you’re not making the leaf shapes and you want to sandwich two together with a simple filling:
100g salted butter, room temperature
150g icing sugar
2 tsp maple syrup
