If you’ve been in Tesco recently, you’ll have seen that they’re currently running a sticker promotion where you can save up to 70% on exclusive Berndes cookware products (collect one sticker for every £20 you spend – once you’ve collected five stickers you can use them to buy the discounted cookware. Tesco very kindly send me one of the casseroles to try. They’re wonderfully chunky and heavy – perfect for soups, stews and casseroles. I tried my hand at a little one-pot cooking:
Pot roasted garlic chicken
1.5kg free range chicken
5 cloves garlic
300ml chicken stock (cube is fine)
1 kg medium potatoes, peel and halved
5 or 6 carrots, peeled and halved
Preheat the oven to 190 degrees/gas 5, then pop the chicken into the casserole dish. Cut a lemon in half and pop into the cavity of the chicken along with four or five garlic cloves. Drizzle with a little rapeseed oil and sprinkle with sea salt and black pepper. Pop the lid on and roast it for about 30 minutes. Give it a quick baste, then throw in the potatoes, carrots and onion, replace the lid and cook for a further hour.
To give everything a bit of colour, leave the lid off for the last ten minutes.
It’s the perfect one pot dinner – gravy included!
