(Okay, so not really doom, but it made for a good title).
So, for the second birthday of April (our planning was a bit off, wasn’t it?), our lovely Sam turned 19. Already suffering from the blow of my youngest child turning 16, I was a bit more philosophical about this one.
After shopping for his present – a new electro-acoustic guitar, we had a lovely meal with some of Sam’s friends in our local Indian restaurant and then came home for drinks and cake.
The Birthday Challenge (if you’re a regular visitor, you’ll know that the Birthday Person gets to choose their birthday cake) was an easy one this time, a double chocolate cake, sandwiched with cream and topped with Wispas. Easy peasy:
You will need:
150g dark chocolate (plus another 200g for the ganache)
170g soft dark brown sugar
145g self raising flour
25g cocoa powder
200g double cream, whipped (plus extra for the filling)
200g dark chocolate
Preheat the oven to 180 degrees/gas 4, and grease and line a couple of medium cake tins. Melt the 150g chocolate in a bowl over a saucepan of simmering water (don’t let the bowl touch the water and turn it off when the water starts to bubble). Meanwhile, beat the the butter and sugar until light and fluffy, then beat in the eggs one at a time (remember if it curdles just bung in a spoonful of the flour). Next, sift the flour and cocoa and stir gently into the mix, then add the cooled, melted chocolate. Divide the mix between the two tins and bake for around 15-20 minutes until they spring back when touched gently in the middle. Watch them carefully, you want soft, moist cake. Leave them to cool while you make the ganache.
I find it easier to weight the cream – you just need equal quantities. Pop the cream and chocolate into a saucepan and heat gently, stirring until the ganache is glossy and smooth:
Now layer up your cooled sponge cake with a layer of the whipped cream and ganache, pop the top layer on and spread over the rest of the ganache. Add your Wispas (optional), et voila, chocolate cake fit for a 19 year old.
