What on earth is up with this weather? Last week, we were convinced that spring had sprung and I was walking the dog in shorts and a t-shirt, and now I’m looking out the window and it’s that proper April rain shower/sunny spell combo weather again. It’s a lot chillier too. This is brilliant for all of us who love nothing more than chatting about the weather (yes, I’m talking about you, Mr E), but not so good if you’re trying to plan your outfit for a day in town or an evening out. At home I’m not bothered because I live in my standard uniform of jeans and trainers (wellies and parkas for walkies), but I’ve got a couple of things in the pipeline that are going to need me to look smart and then what do I do? For this weekend’s wishlist, I’ve been doing a bit of research at one of my favourite retailers and I’ve come up with some ideas for spring dressing with M&S, who are knocking it out of the park at the moment, fashion-wise.
We tend to go through different little food fads in our house. A while ago it was home made pizzas, then it was a gazillion iterations of coconut based curries, and now we’re addicted to empanadas. Think of empanadas as delicious little spiced Cornish pasties. You’ll find them all over Latin America and Spain, stuffed with all sorts of delicious fillings. I tend to fill mine with a dry-ish version of my normal chilli mixture. If you want to go all technical and make proper Chilean empanadas de pino, you’ll need to add raisins, chopped boiled eggs and olives, which, as you can imagine is a stretch too far for the fussier ones in my family, so I stick to a spicy minced beef filling. The dough for these deliciously simple empanadas is fab: really easy to work with and really forgiving – no resting necessary.
Recently, I told you all about my amazing Saturday Night Takeaway adventure, and promised to update you on some of the new openings and gossip from Universal Orlando Resort, Florida. While we were in the park, we were really lucky to be given a sneaky peek behind the scenes at an incredible new attraction (and also the opportunity to eat ALL THE DOUGHNUTS at the fab new Voodoo Doughnuts on Universal’s CityWalk – more news of this very soon). The new Fast & Furious – Supercharged at Universal Orlando featuring the stars of the movie franchise as well as breathtaking original vehicles, is due to open very soon and promises an action-packed ride experience. Here’s what I learned…
This week, having finally beaten the jetlag which has been making everything foggy and slow, and also having finished drafting all of the new recipes for the book update I’m writing for a work thing (woohoo!), I woke up to beautiful, spring sunshine streaming through the window. I sat and had a cup of tea with the dog on my favourite blue seat in the garden and watched as my beautiful baby cherry tree shed its blossom in the breeze, like pretty pink snowfall. Oh, isn’t it glorious? As you know, I’ve been lucky enough to have had a couple of trips away so far this year, but even then, I rarely feel like I nail the effortless sunny day dressing thing. As much as I’d love to wear bright colours and prints, I just don’t feel right in them. I’m a more relaxed, monochrome dresser at heart, but feel this mostly lends itself to winter dressing: black jeans, grey cashmere and white shirts are an easy uniform, somehow, when it’s cold. So is it possible to dress for summer without opting for brights and florals (yes, I know they look lovely on some people), well, I’ve had a scout around, and here are a few of my favourite things for chic dressing for sunny days.
I’m sure I speak for many of us when I say that I feel really uncomfortable looking back to past holidays where we’ve interacted with captive dolphins. We all love dolphins (I spotted this one off the coast of Agadir from a cruise ship), and I’ll the be first to admit that the chance to interact with them was just too tempting, but I know I’m not alone in looking back now and feeling quite sad that we played a part in supporting an industry that, even at the time, made us feel uneasy. Now, I feel that times have changed for the better, and there really has been a shift in what we feel is acceptable with regard to the welfare of dolphins and whales in captivity (in fact, in a poll of 1000 UK consumers* last year, 95% wanted to see tour operators change the way they work with attractions featuring whales and dolphins). I wanted to be the first to tell you about a fabulous new initiative that’s going to make you love Virgin Holidays even more than you do already (if that’s possible). Yesterday, Virgin Holidays announced that they’re going to be investing into a wonderful new project: North America’s first dolphin sanctuary. I asked them all about it and here’s what I found out:
In part one of my little love letter to the beautiful Viking Sea, I wrote about how much I loved the beautiful design details and wonderful service that make the ship so special. as well as telling you about the first stop on Viking’s West Indies Explorer itinerary, San Juan. From there, we sailed on, following a roughly south easterly track that would eventually take us to our final port, Barbados. Here’s the final part of my onboard diary, in which we discover even more of the Caribbean on board Viking Sea.
I had some pastry left over after wildly overestimating the amount I was going to need for an apple tart, and decided to try my hand making some mini Bakewell tarts. I kid you not, these babies are delicious and were completely demolished in less than five minutes. If you want to go all Mr Kipling, feel free to slather them in really thick icing. I prefer just a drizzle and – of course – a cherry!
What an exciting week it’s been! In my head, I’m still at Universal Orlando Resort in Florida in the audience at the live finale of Saturday Night Takeaway, laughing at Dec, Scarlett and Stephen’s rowing race at Volcano Bay, boogying to Craig David, learning dance moves with Jason Derulo and singing the Friends theme with The Rembrandts. If you don’t follow me on social media (and if not, why not?!) you might have missed the exciting news that last week I was lucky enough to fly out to Orlando for a behind the scenes sneaky peek at the Saturday Night Takeaway live finale. My Saturday Night Takeaway adventure began when I joined the lucky place on the plane ticket winners and boarded a specially chartered Virgin Atlantic flight to Orlando. As you can imagine, the atmosphere on board was pretty electric, Stephen Mulhern and Scarlett Moffatt were milling around, chatting to the winners and the gorgeous, glam Virgin cabin crew were on hand to make sure we were all safe and looked after.
A couple of weeks ago, I wrote about discovering (or rediscovering) the Caribbean after it was battered by hurricanes Irma and Maria, and promised to tell you more about our ship, the beautiful Viking Sea. So what’s it like to sail on Viking Sea around the Caribbean? Well, it’s a relatively small ship carrying just over 900 passengers, and on board, you won’t find a casino, on board photographers, gaudy kids’ clubs (in fact, any kids) or drum and bass by the pool. The emphasis is on relaxation, and – cliché alert – connecting with the sea, so what you will find are wide ocean vistas, calming colours, friendly staff and breathtakingly beautiful design details. I don’t think I’ve ever loved a ship as much. Everywhere you look there’s another gorgeous, mid century chair in a perfect little corner inviting you to sit and read, or sip a cocktail.
Breakfast on a weekday can be a bit of a rushed affair. I don’t generally even bother with breakfast, but if we do anything it will be a quick piece of toast or bowl of cereal. On the weekends, though, we really like to take our time and do a proper family late breakfast/brunch. Often this will be bacon and eggs or pancakes and syrup, but my absolute favourite is our vanilla French toast. The lovely chaps at Prestige sent me one of their fab Dura Forge square grill pans, so I thought it was about time I shared my recipe (it’s not a difficult one, but I have a certain way of doing it) and tried out my swanky new pan at the same time.
If you follow me on Instagram, you might have noticed a short video that I did for the Ultrasun #myskinis campaign. It’s a fab campaign, not gimicky or hyper hard-sell, but basically created to spread the word on choosing the correct sun protection for our particular skin type, and also about applying it properly. I did a little piece to camera, talking about my skin and also about a few new things I’d discovered during the campaign. This was filmed just after my Dad died and I’ll be honest, I was having a rotten time. The guys at Ultrasun were the sweetest, kindest, most understanding people during this time and I think it’s just made me love everything about Ultrasun even more.
