It’s a chill out day here at English Towers. We had a fab party last night (more of this very soon!), so today is all about lazing in the garden (isn’t the weather divine? I never want it to end) and easy, tasty food. This summer, Sainsbury’s launch the latest in its Little Twist recipes: each one giving an unexpectedly clever and yummy new twist on classic summer recipes. Since we’re lazing, I decided to give the rice pop chicken tenders a go. Here’s how we got on:
Rice Pop Chicken Tenders
50g plain flour
½ tsp garlic granules
2 large eggs
125g Sainsbury’s Rice Pops
½ tsp smoked paprika
460g chicken breasts, cut into even sized strips
1 tsp vegetable oil
First of all, you need to do a bit of basic assembly. Grab three bowls:
Bowl 1: add the flour and the garlic granules along with a generous amount of seasoning (you really do need this).
Bowl 2: crack in the eggs and beat with a fork.
Bowl 3: add the Rice Pops and give them a really good crush with your hands (weirdly satisfying), then stir in the paprika.
Pre-heat the oven to 200c/180c/gas mark 6 and lightly grease a large baking tray. Now for the fun bit: dip each piece of chicken in the flour, then the egg (let the excess drip off), then finally the crushed Rice Pops.
Place on the baking tray and bake in the oven for 20 mins until golden and cooked through, turning over half way.
We served ours in the garden with some fresh, crunchy veg and a big dollop of mayo for dipping. Absolutely delicious: tender on the inside and crispy on the outside. Perfect lazy food and absolutely ideal for a quick midweek meal with a twist too!
