One of my favourite things to do at Walt Disney World Resort Florida is to take a sunny walk around World Showcase at Epcot. The best smelling part, bar none, is the amazing Karamell-Küche in the Germany pavilion, the home of Werther’s Original, where you can sample all sorts of yummy treats made with the famous caramel: cookies, fudge, and – my favourite – salted caramel brownies.
To celebrate the return of Walt Disney World Resort Florida’s awesome Free Dine offer for 2016, the lovely chaps at Disney asked me to share my favourite recipe, and of course it had to be the brownies.
If you don’t know much about the Free Dine offer, it basically does exactly what it says on the tin: if you book a 2016 Walt Disney World resort and ticket package at a moderate, deluxe or deluxe villa for a minimum of five nights, everyone on your booking will dine for free! That means that a family of four can save over £1000 on a seven night break, which is AMAZING value.

So back to those brownies then…
You will need:
200g dark chocolate
175g salted butter
3 free range eggs (room temperature)
200g soft brown sugar (caster is fine if you don’t have any)
110g plain flour
100g of CHEWY toffees, chopped (don’t get the standard Werther’s Original, they’ll break your teeth – plus extra for drizzling at the end)
So firstly, get all your ingredients together, and preheat the oven to gas 4/180 degrees.
Melt the butter and chocolate in a heatproof bowl (not a plastic one) over a saucepan of just-simmering water – don’t let the bottom of the bowl come into contact with water. Turn the water off when it’s just bubbling and stir the mixture gently until it’s combined.
Take it off the heat and allow to cool to room temperature (if you pour very hot chocolate into the egg mixture you risk getting bits of scrambled egg in your brownies. Ick).
Whisk the eggs and sugar together until pale and frothy, then pour in the cooled chocolate/butter mixture and stir well.
Add in the flour and stir briefly until it disappears. Lastly, stir in the toffee pieces, then pour into a buttered, square cake tin.
Bake for 25-30 minutes or until the top is cracked and shiny. The centre should still be slightly soft and squidgy.
For a final flourish, melt four or five toffees in a non stick saucepan with a tablespoon of milk. Dribble the toffee over the brownie and add a pinch of sea salt.
Leave to cool a little bit before slicing.
