Good morning, good morning! The sun is shining (well, it is at the moment – clearly if you’re reading this next November then it might not be) and this week’s Sunday baking has a lovely, summer strawberry theme, courtesy of Beko, who challenged me to create a perfect strawberry recipe, inspired by their Wimbledon strawberry recipes page (check out the strawberry, basil and goat’s cheese panini – yum). Our local pick your own farm has just opened again for the summer and the strawberries are ABSOLUTELY HUGE! I thought I’d do a bit of research into strawberry shortcakes and it seems they’re actually more scone-like than shortbread, so this one’s a bit in between: a shortbread mixture, but lightened up with baking powder and an egg. I love the little dots of green pistachio in there too – so pretty! Bash them with a rolling pin, but leave some big pieces which add a bit of crunch.
Pistachio strawberry shortcakes:
75g caster sugar plus extra to finish
1/2 tsp baking powder
50g shelled pistachios, lightly crushed
1 small tub whipping cream
1 tsp vanilla extract
Dribble of strawberry jam
First, then: preheat the oven to 190C/gas 5
Beat the butter and the sugar together until smooth, add the egg then mix again.
Stir in the flour, baking powder and pistachios until it forms a soft dough (but don’t over-knead).
Turn on to a well-floured work surface and gently roll out until the dough is 1cm thick.
The dough is quite sticky, so flour your cutter before cutting the dough into rounds (or squares, or whatever), then placing onto a well floured baking tray.
Bake in the oven for 12-15 minutes, or until just coloured. Set aside to cool on a wire rack.
Before serving, whip the cream with the vanilla until it forms soft peaks, then pile on top of the pistachio shortcakes. Add sliced fresh strawberries, and then make a strawberry glaze by adding a dash of boiling water to a tablespoon of strawberry jam, and dribble it over the top. Scatter with a few more pistachios.
