Okay, slightly cheating here as there’s no actual baking involved, but cheesecake is still cake, right? Anyway, yesterday was Charlie’s 18th birthday. How I came to be the mother of an 18 year old when I’m such a youngster is beyond me, but anyway it happened, and as usual, the Birthday Big Cheese got to choose the birthday cake of his dreams. No surprises here as Charlie basically always chooses variations of the same thing (which is a welcome change from the others who tend to devise me a GBBO-style technical challenge for every birthday) and this time chose an Oreo chocolate cheesecake. To make sure your cheesecake is smooth and silky, make sure you allow the cream cheese to come up to room temperature first.
When I first made this cheesecake, I made the base with Oreos too, but there’s something about the texture that makes it quite dense and solid. I prefer chocolate digestives, but feel free to use Oreos if you want to.
You will need:
300g chocolate digestives
200g bar of good quality dark chocolate
500g cream cheese
100g + 50g icing sugar
200ml + 100ml double cream
1 tsp vanilla extract
1 packet Oreos
Gently melt the butter in a saucepan over a low heat. While it’s melting, smash up the digestive biscuits, either by popping them into a plastic bag and whacking them with a rolling pin (the best fun) or whizzing them in the processor until they’re just crumbs. Stir the butter into the biscuits then press evenly into the bottom of a lined springform tin and leave to cool.
Next, melt the chocolate in a heatproof bowl over a pan of just simmering water (don’t let the bottom of the bowl touch the water). When it’s melted, set aside to cool to room temperature.
Spoon the cream cheese into a bowl, beat it until smooth then sieve in 100g icing sugar and stir that in well.
Add the cooled chocolate to the cream cheese and icing sugar and stir well, then whip 200ml of the cream and fold that in too. Smooth the mixture over the biscuit base.
With the last 100ml of cream, whip until soft, then sift in the 50g icing sugar and add the vanilla extract. Stir well to combine. Smooth in a thin layer over the top of the cheesecake. Chill for a couple of hours until completely set.
Finally, decorate with the Oreos and bung on a few candles. Et voila! Happy birthday, Charlie (I tried to get a nice picture – I really did) xx
