Sam came home from uni the other day and completely randomly had a craving for loaded potato skins. They’re not something I ever cook, but I had a go and wow, they’re pretty moreish. I can see them being our Saturday evening TV viewing snackage of choice from now on. Here’s how I did it:
You will need:
1 large potato (or 2 smaller ones) per person
1 pack streaky smoked bacon
Laughing Cow triangle or two
Grated strong cheddar cheese (as much as you dare!)
So first, give your potatoes a scrub and stab them through with a metal skewer (this helps them cook quicker).
Bake the potatoes at 200 degrees C/gas 6 for an hour to an hour and a half depending upon size.
In the meantime, snip the bacon into little pieces and fry until it’s really crispy.
When the potatoes are cooked, scoop out the centres (leaving enough so that they keep their shape), mix with a knob of butter, a couple of Laughing Cow triangles, loads of grated cheese and the bacon. Add in some chopped spring onion too, if you like.
Give them a final sprinkling of cheese then pop them back in the oven for 15-20 minutes until golden. We ate ours with a green salad, beans and coleslaw. Yum.
