One of my absolute favourite adventures while we were in Walt Disney World was a special, money can’t buy visit to Chef Jeff, Executive Chef at Disney’s beautiful Contemporary Resort, one of my top five Walt Disney World resort hotels. Chef Jeff and his team are responsible for all the patisserie for the resort, from gorgeous special occasion cakes, to the wonderful cupcakes available in the café.
I tried my first ever cupcake in the Contempo Café at the Contemporary. It was the peanut butter one. Still my favourite to this day. For our masterclass, though, Chef Jeff showed us how to make a fabulous Mickey Mouse cupcake, with chocolate buttons for ears..
… and then passed us on to his colleague Yvonne, who showed us how to make their beautiful Frozen cupcake. Here’s how to do it:
Step one: remove a cone shape, fill centre with chocolate ganache
For the Frozen cupcake, Yvonne uses a delicious, dense chocolate cupcake, then carefully cuts out a cone-shaped piece from the middle. She then fills the resulting hole with rich chocolate ganache (a mixture of chocolate and cream):
Step two: the circle of cream cheese frosting
Yvonne then takes another piping bag filled with cream cheese buttercream frosting, and carefully pipes around the edge of the ganache filling:
Step three: replace the cone, pipe the blue-streaked frosting
Now, Yvonne carefully pops the cone back on the cupcake, using the circle of buttercream frosting as her guide. The frosting used to top the Frozen cupcake is the cream cheese buttercream that has been swirled with blue food colouring but not completely mixed in. This is then piped carefully around in a swirl:
Step four: that all important decoration
For a final flourish, the edge of the cupcake is pressed with snowflake sprinkles, before the whole cake is dusted with iridescent edible glitter.
Then a little Frozen picture decal is added to the top of the cupcake. Eh voila!
True to form, I did mine wrong, using a vanilla cupcake instead of a chocolate one as my starting point. Still, I don’t think it came out too bad…
