So how did you feel this morning when the alarm went off? After all the lovely festive lie-ins, English Towers was not a happy household. I find that what you really, really need on these cold mornings (apart from a hug, obviously), is a mahoosive tower of puffy, fluffy American pancakes. The lovely chaps at Flora were kind enough to share their wonderful recipe for American pancakes with me, and challenged me to come up with some awesome breakfast recipes to help you all through all these ffffrrrreeeezing mornings!
So first things first, the recipe calls for nothing more exotic than flour, baking powder, eggs and milk – and we’ve all got that in the cupboard, right? So once you’ve mastered the original, it’s time to go a little off piste. Here are my favourite suggestions:
The ‘Totally Tropical’ Twist
Substitute the milk in the recipe with tinned coconut milk. If you’re tempted to go ‘totally tropical’, a few slices of pineapple, sprinkled with brown sugar and grilled, wouldn’t go amiss.
The ‘English Towers Special’
This is our weekend brunch of choice, and basically consists of the biggest tower of pancakes, and as much crispy streaky bacon as we can possible fit on the grill, plus a healthy drizzle of maple syrup. Yum.
The ‘Blueberry Blockbuster’
As you’re pouring the pancake batter into your pan, drop in a few blueberries – they look really pretty and go delightfully squidgy, giving you inbuilt jammy sweetness in every bite.
The ‘Barely Disguised Dessert’
Dessert as breakfast? I’m totally up for that. Add a scoop of ice cream and a drizzle of chocolate sauce too. Sprinkles optional!
The ‘Winter Warmer’
Add a dollop of warm stewed apple, a dusting of cinnamon and a dribble of runny honey. A breakfast that will sent you out into the world ready to face any challenge!
