Mr English isn’t the romantic type, so we’ve never really embraced the whole flowers and chocolates thing, although we do send a card to each other (not really the same when you’re pretty certain who your secret Valentine is). People tend to fall into two camps Valentines-wise, they either love it or hate it. I think that if there’s a day in the year when you’re reminded to tell someone how much you love them, then so much the better. And what better way to express your love than with cake?
Jaime, the Head Chef at Yeo Valley, has come up with the perfect Valentine’s treat to make your loved one. It would make a perfect dessert after a romantic meal and is surprisingly simple to make.
Jaime makes the roulade with raspberries, but you can try different fruit too. I made mine with some cherries I froze back in the summer. The fat free sponge is made by whipping eggs and sugar to a mousse and then adding flour and cocoa powder.
You then spread the mixture out on a lined 10 x 15” baking tray. After cooling, the sponge is rolled around a yummy filling of fruit and Yeo Valley 0% Fat Greek Natural Yeogurt. I was worried about rolling up the sponge, but, as Jaime pointed out to me on Twitter (you can follow him @jaimethechef), it’s surprisingly flexible and strong.
Add a layer of gorgeously chocolatey yogurt ganache and a sprinkling of icing sugar and you’re done. Easy!
So here’s my version of Jaime’s wonderful dessert – a chocolate and cherry roulade. Might even get a Valentine’s kiss off Mr English for this one…
