Boozy Ginger Biscuit Chocolate Log

Oh, and me and me Mam were reminiscing about this little beauty. It was a Christmas tradition in our house and it may sound weird but it tastes bloody fab.

1 packet ginger biscuits
Sherry or orange juice (ooh, or Morgan’s Spiced Rum would be great)
Double Cream, whipped
Dark chocolate

So take each biscuit individually and then dunk it in the sherry (or orange juice if you’ve got kids eating this and you don’t want them staggering around telling dirty jokes). Sandwich them all together into a long roll (don’t dunk too many at a time, you’ll get mush) with a splodge of cream. Then cover the whole thing in the whipped cream and then completely cover in shaved (or grated) dark chocolate. It looks very chocolate-log-like and festive. Stuff a bit of holly on top and Bob’s your Auntie. Oh and leave it overnight in the fridge to get even more soft and delicious. Yum.

    OK EM, since we’re talking food, food, food. What do you think of the Avoca cookbooks – when I lived in Ireland, this was a place your granny might shop, but I hear it’s changed and is now a hip sort of place. I’m thinking about ordering one of their cookbooks, any thoughts?
    Also, I make this but with chocolate bikkies, very good too.

    Hi Sandra! Sounds yummy with the chocolate biscuits – must try that. Not bought any of the cookbooks you mentioned – will ask Isit, she’s the knowledgable one re these things. x

    Delicious! My father-in-law makes a similar sort of dessert – all the kids (none of them a day under 30) remember it fondly and occasionally nag him to make it :-)

    If it’s any help, I’ve got both Avoca cookbooks and they’re ok – but I’ve had slightly mixed results. Good for ideas if you’re happy tweaking recipes. And some lovely pancakes in Avoca 2!

    (sorry EM, I’m just hijacking your blog for a moment here) that IS heplful as I’m not a great cook, and wouldn’t dream of taking the initiative when following a recipe. I do EXACTLY what they tell me to do, so even if I see black smoke after 25 minutes, I will leave whatever it is, in the oven for the 30 minutes it says, regardless! Cheers!
